I am excited to share this recipe!
Outside of hummus and veggies, this is my go-to salad to take to parties, get togethers or hanging out at the beach. Whenever I bring it, I get asked for the recipe by at least one person.
So simple. So easy. So healthy. So tasty.
It is also a great way to use up some leftover quinoa.
Add some grilled chicken to make it a heartier meal.
You can add the quantities of each ingredient to your taste so I am not adding specific amounts of each ingredient. Toss all the ingredients together and voila, you are good to go!
Let me know if you try it. Perhaps even share a picture of your tasty creation please.
Nourish your mind,
Jen
